Ingredients

Bhajni Flour
  • 2 cups rice flour
  • 1 cup roasted chana dal (split Bengal gram)
  • 1/2 cup urad dal (split black gram)
  • 1/4 cup whole wheat flour
  • 1/4 cup coriander seeds
  • 2 tablespoons cumin seeds
  • 2 tablespoons sesame seeds
  • 1 tablespoon ajwain (carom seeds)
  • 1 tablespoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
For the Dough
  • Prepared Bhajni flour
  • 2 tablespoons hot oil
  • Water, as needed
For Frying
  • Oil, for deep frying

Instructions

1. Preparing the Bhajni Flour
  1. Dry roast chana dal, urad dal, coriander seeds, cumin seeds, and sesame seeds until aromatic.
  2. Cool and grind into a fine powder.
  3. Mix rice flour, wheat flour, ground spices, chili powder, turmeric, and salt.
  4. Your Bhajni flour is ready.
2. Making the Dough
  1. Add hot oil to Bhajni flour and mix well.
  2. Add water gradually and knead into a firm dough.
  3. Cover and rest for 15–20 minutes.
3. Shaping & Frying Chakli
  1. Divide dough into portions.
  2. Use a Chakli press with spiral disc.
  3. Press spirals onto greased plate.
  4. Deep fry on medium heat until golden and crispy.
  5. Drain excess oil and cool completely.
