🧂 Ingredients
  • 1 cup rice flour (sieved)
  • 2 tbsp besan flour
  • 1.5 tbsp fried gram flour
  • 2 tsp butter
  • Jeera or sesame seeds
  • Hing & salt
  • Water as required
  • Oil for deep frying
🔥 Method
  1. Grind fried gram into a fine powder.
  2. Dry roast besan lightly until aroma appears.
  3. Sieve rice flour, roasted besan & fried gram together.
  4. Add jeera/sesame, hing, butter & salt.
  5. Add water gradually to form soft, slightly sticky dough.
  6. Fill dough into chakli press with star nozzle.
  7. Press directly into medium-hot oil.
  8. Fry until golden and bubbling subsides.
  9. Drain and cool completely.
Pro Tips:
  • Fried gram flour ensures melt-in-mouth texture.
  • Do not overuse butter – murukku may break in oil.
  • Cover unused dough with damp cloth.
  • Do not rest dough to avoid color change.
  • Cool fully before airtight storage.
