🧺 Ingredients
1 cup rice flour
1 cup water
1 tsp chilli powder (optional)
1 tsp sesame seeds (black or white)
1 generous pinch hing (asafoetida)
Salt to taste
2 tsp ghee
Oil for deep frying
🔥 Method
Boil water in a pan and add salt, chilli powder, sesame seeds.
Reduce flame and add hing and ghee.
Add rice flour slowly while mixing continuously.
Turn off flame and cover for 5 minutes.
Knead into a soft, pliable dough.
Fill dough into greased murukku press.
Shape jangiri-style swirls on greased ladle.
Heat oil and fry murukku in medium flame.
Flip and fry until golden and crisp.
Drain excess oil and cool completely.
Tips:
• Use fine rice flour for smooth swirls
• Skip chilli powder for festival versions
• Do not exceed ghee quantity
• Keep dough covered to avoid drying
• Fry only on medium flame
