🧺 Ingredients
  • 1 cup rice flour
  • 1 cup water
  • 1 tsp chilli powder (optional)
  • 1 tsp sesame seeds (black or white)
  • 1 generous pinch hing (asafoetida)
  • Salt to taste
  • 2 tsp ghee
  • Oil for deep frying
🔥 Method
  1. Boil water in a pan and add salt, chilli powder, sesame seeds.
  2. Reduce flame and add hing and ghee.
  3. Add rice flour slowly while mixing continuously.
  4. Turn off flame and cover for 5 minutes.
  5. Knead into a soft, pliable dough.
  6. Fill dough into greased murukku press.
  7. Shape jangiri-style swirls on greased ladle.
  8. Heat oil and fry murukku in medium flame.
  9. Flip and fry until golden and crisp.
  10. Drain excess oil and cool completely.
Tips:
• Use fine rice flour for smooth swirls
• Skip chilli powder for festival versions
• Do not exceed ghee quantity
• Keep dough covered to avoid drying
• Fry only on medium flame
