🧺 Ingredients
  • 1 cup raw rice (Sona Masoori)
  • 2 tbsp urad dal flour (heaped)
  • 3 tbsp butter (softened or melted)
  • 2 tsp sesame seeds
  • ¼ tsp asafoetida (hing)
  • Salt as required
  • Water as needed
  • Oil for deep frying
🥣 Preparing the Dough
  1. Soak rice for 2 hours, drain and dry on cloth.
  2. Grind into fine flour and sieve.
  3. Fry urad dal, grind and sieve (optional).
  4. Mix rice flour, urad flour, butter, sesame seeds, hing and salt.
  5. Add water gradually and knead into soft dough.
🔥 Shaping & Frying
  1. Twist dough by hand on cotton cloth.
  2. Heat oil in kadai.
  3. Drop 3–4 murukkus carefully.
  4. Fry on medium flame.
  5. Flip once bubbles reduce.
  6. Fry until golden and crisp.
  7. Cool completely before storing.
Notes:
• 1 cup rice yields ~2 cups flour
• Sprinkle water if dough breaks
• Test oil with first murukku
• Do NOT drop dough balls directly in oil
