Tips:
  • Adjust chilli powder for spice level.
  • Dough should be soft, not crumbly.
  • Add a little water if dough cracks.
  • Fry on medium flame for even crispiness.
Ingredients
Masala Tomato Puree
  • 2 medium tomatoes, chopped
  • 2 green chillies
  • ½ inch ginger
  • 2 garlic cloves
  • ¼ cup water
Stick Dough
  • 2 cups rice flour
  • ½ cup besan (gram flour)
  • 2 tbsp roasted chana dal powder
  • ½ tsp cumin seeds
  • ¼ tsp turmeric powder
  • ½ tsp garam masala
  • ½ tsp red chilli powder (adjust)
  • Pinch of hing
  • Salt to taste
  • 1 tsp butter (room temperature)
  • ¼ cup water (as required)
Method
  1. Blend tomatoes, chillies, ginger, garlic and water to a smooth paste.
  2. Mix rice flour, besan, chana dal powder and spices in a bowl.
  3. Add butter and mix well.
  4. Add masala tomato puree and combine thoroughly.
  5. Add water gradually and knead into a soft dough.
  6. Shape dough into stick forms using hands or press.
  7. Heat oil for deep frying.
  8. Fry sticks on medium flame until golden and crispy.
  9. Drain excess oil on paper towel.
