Tips:
  • Dough should be soft, not crumbly.
  • Add little water if sticks crack.
  • Do not overcrowd oil while frying.
  • Fry on medium flame for uniform crispiness.
Ingredients
Palak Puree
  • Handful of palak (spinach) leaves
  • 2 green chillies
  • ¼ cup water
Stick Dough
  • 2 cups rice flour
  • ½ cup besan (gram flour)
  • 2 tbsp roasted chana dal powder
  • ½ tsp cumin seeds
  • Pinch of hing
  • Salt to taste
  • 1 tsp butter (room temperature)
  • ¼ cup water (as required)
Method
  1. Blend palak leaves, green chillies, and water into a smooth puree.
  2. Mix rice flour, besan, chana dal powder, cumin, hing, salt, and butter.
  3. Add palak puree and combine well.
  4. Add water gradually and knead into a soft dough.
  5. Shape dough into stick forms using hands or press.
  6. Heat oil for deep frying.
  7. Fry sticks on medium flame until golden and crispy.
  8. Drain excess oil and cool.
